Make It Work
“Project Runway” is absolutely one of my favorite reality shows, and I’m pairing it with one of my favorite salad recipes, which I have been known to eat for breakfast.
This vegan, gluten-free and soy-free salad recipe makes 1 “serving.” For the recipe test in these pictures, we made 2 servings.
Ingredients
2 cups arugula
0.25 cups vegan feta, crumbled
0.25 cups pistachios, shelled
0.25 cups pickled beets, cubed
2 tablespoons balsamic vinaigrette
Instructions
Place your arugula in a bowl.
Top the arugula with the crumbled feta, shelled pistachios and cubed beets.
Drizzle the balsamic vinaigrette over the top of the salad.
Enjoy it while catching up with “Project Runway!”
The Easy Route
You can buy pre-crumbled vegan cheese instead of crumbling it yourself.
Of course, you can always find yourself a premade vegan arugula salad at a grocery store or restaurant for pickup or delivery. It may be difficult to find one with vegan feta, though.
The Pairing
I just finished watching the incredible 20th season of “Project Runway.”
The reality competition show features about 20 up and coming fashion designers each season as they compete for opportunities to elevate their design skills, get their work in front of industry insiders and the chance to win a sweet cash prize to help them grow their brand.
“Project Runway” has gone through a rotation of hosts, judges and mentors, from the foundations with Heidi Klum and Tim Gunn (who coined the “make it work” tagline) to the current lineup of OG judge Nina Garcia, Elaine Welteroth, Brandon Maxwell and Christian Siriano, a former winner who has gone on to become a highly coveted fashion designer and currently serves as the mentor on the show.
The show started on Bravo, jumped ship to Lifetime for a few years and is now back on Bravo. As much as I didn’t like to admit I watched a Lifetime show, I followed it there and back.
Like “Top Chef,” I really appreciate “Project Runway” because it focuses on the designers and their work without getting caught up in too much interpersonal drama that can be the hallmark of some reality shows.
To celebrate 20 years of the show, the most recent season has all-star contestants competing from nearly every previous season, and it’s been fun to take a trip down memory lane with them.
