Adventure Wraps

In honor of Syttende Mai (Norwegian Constitution Day on May 17), I’m pairing one of my favorite modern Scandinavian shows with a lunch that involves a Norwegian delicacy: lefse.

Also, last week’s recipe was one of the more complex ones here, so I wanted something quick and easy this week.

This vegan recipe makes 1 lefse wrap or 1 “serving.” If you find vegan, gluten-free lefse, this recipe can also be gluten-free.

Suggested Ingredients
1 large piece of vegan lefse
2 tablespoons vegan chive cream cheese
0.25 large cucumber, sliced
0.5 cups shredded carrots
0.25 cups microgreens

Instructions
I’m going to start this by saying you can put whatever soft vegan cheese and veggies you want in this. And also feel free to add vegan deli meat, fresh or dried herbs and any sauce you typically enjoy in a wrap.

Place your lefse on a plate and spread the cheese in the middle, leaving space on the sides and bottom for folding around all of the ingredients.

Pile on the cucumber, carrots and microgreens.

My husband made a variation with vegan whipped ricotta, cucumber, carrots, microgreens and Italian dressing.

Wrap yours up and take it on your trip to the couch to watch Hilda have some adventures with her friends!

The Pairing
“Hilda” is a show my husband picked out for us to watch, in part due to his Norwegian heritage.

However, it didn’t take me long to get sucked into the adventures of this brave little girl and her cohort of friends, family and mystical creatures.

I’m a big fan of mythology and fairy tales, so I personally love how the show balances the fantasy aspects with also being Hilda’s modern coming-of-age story.

I didn’t know until I wrote this blog post that Bella Ramsey is the voice of Hilda, and that honestly makes the show all the more charming.

Some might see “Hilda” is animated and write it off as a kids’ show, but the storytelling was still captivating to me as a thirtysomething.

There is also a movie spinoff of the show, “Hilda and the Mountain King,” but that’s a topic best saved for a future blog post.

Coming in at three seasons with a total of 34 episodes, “Hilda” is a manageable show to binge watch and lots of fun for a family to check out together.
