Dairy-Free Dinner Dinner and a Show Gluten-Free Lactose-Free Low FODMAP TV Vegan Vegetarian

Aggretsuko Ramen

One of my new favorite things to make is miso ramen soup. When I started the low FODMAP diet, it was hard to find a vegetarian broth without garlic and onion, so I turned to miso.

I ate professionally prepared ramen for the first time when we lived in the Seattle area, so whenever I’m missing the Pacific Northwest life, it’s one of my go-to meals.

This recipe is low-FODMAP, vegan and gluten-free, serving four people. You can easily add other ingredients if you’re not following those dietary choices and adjust the ingredients for more or fewer servings.

Ingredients
6 cups water
8 teaspoons white miso paste
4 teaspoons chives
4 teaspoons red pepper flakes
1 brick tofu, cubed
2 bricks of brown rice ramen noodles (4 servings)
2.67 cups sliced carrots
3 ounces oyster mushrooms, pulled apart

Instructions
In a pot over high heat, mix together the water, miso, chives and red pepper flakes. Note that this amount of red pepper flakes will make it pretty spicy. Feel free to adjust down to 1-2 teaspoons if you want less heat on your palate.

Once the miso is evenly mixed with the water and spices, add the cubed tofu, ramen noodles, sliced carrots and mushrooms.

Stir and cook for 10 minutes or until the noodles are tender. As the noodles start to soften, use a fork or chopsticks to pull them apart.

Put the ramen in bowls to serve it, topping with additional chives (optional).

The Easy Route
Order ramen from your favorite restaurant for delivery or takeout. Many grocery stores also sell prepackaged ramen in the Asian dry goods or frozen foods sections. Or check out your local Asian or Japanese grocery for some options.

The Pairing
“Aggretsuko” is an anime that centers on Retsuko, a soft-spoken accounting office employee by day and avid metal karaoke singer by night.

Adding to the contrast of Retsuko’s life are the fact that the show is produced by Sanrio and she is an adorable anthropomorphic red panda.

I drew inspiration for my recipe from the show. What looks like a typical warm, inviting bowl of miso ramen soup gives you a bit of a wallop with the intensity of the red pepper flakes.

“Aggretsuko” is a great combination of comedy, drama and musical. This is absolutely one of my favorite shows currently airing, in part because it addresses some of the frustrations of being an office worker in such a fresh way.

You follow Retsuko and the daily drama of her office with her coworkers, and you also get to know her outside of work, from the karaoke sessions to driving lessons and more as the series progresses.

I find Retsuko to be one of the most relatable TV characters I’ve seen, and I am neither a heavy metal lover nor a rabid anime fan.
