Barbie’s Cream House
I knew I had to go very pink for my Summer of Scoops ice cream pairing with “Barbie.”
This vegan, gluten-free raspberry bubble gum ice cream recipe makes 2 pints or 4-6 “servings.”
Ingredients
1.5 cups vegan milk
11.2 ounces vegan plain creamer
1 teaspoon raspberry extract
1 teaspoon bubble gum extract
2 tablespoons vegan sugar
0.11 ounces vegan, gluten-free pink food coloring
1 teaspoon xanthan gum
3 tablespoons vegan, gluten-free rainbow sprinkles
Instructions
Pour the milk, creamer, raspberry extract, bubble gum extract, sugar, pink food coloring, xanthan gum and 1 tablespoon of sprinkles into a blender.
Pulse until all of the ingredients are evenly mixed.
What happens next depends on your ice cream maker. If you have a more standard one, you’ll pull your chilled (for 24 hours) bowl out and pour in the mixture to make the ice cream.
If you have one like mine, you pour the mixture into two pints then freeze them for 24 hours.
After that time, you put the pint into your ice cream maker and let it do its magic on the ice cream setting.
After putting each pint through the ice cream cycle, use a big spoon to dig a hole in the middle and pour in another tablespoon or two of sprinkles. Make sure you dig all the way down to the bottom to ensure your sprinkles are evenly distributed throughout the ice cream. (Get more of my ice cream 101 tips here.)
Run the pint through the mix-in cycle if you have an ice cream maker like mine. If you have a basic ice cream maker, just pour the sprinkles in towards the end of its spin cycle.
Scoop, serve and enjoy with “Barbie!”
The Easy Route
You could just add some sprinkles and bubble gum extract to an existing pint of vegan raspberry ice cream.

The Pairing
Where do I begin? I absolutely adored Greta Gerwig’s “Barbie,” and it held up for me on rewatch.
The attention to detail in this film’s costumes and set design is unparalleled, a product of a filmmaker with a strong vision and talented craftspeople to bring it to life. It is a cotton candy-colored feast for the eyes in more ways than one.
On top of the striking visuals, there is the storytelling. The weaving of Barbie lore in between a blending of the fantasy, coming-of-age, musical and drama genres was done impeccably well.
Then, of course, you have the wonderful ensemble cast. Margot Robbie is perfect as “stereotypical” Barbie, and Ryan Gosling dazzles as beach Ken.
But for me, the real star of the show here is America Ferrera as Gloria, a Mattel employee. I know many people are probably tired of her monologue circulating on the internet, but I do believe it is still powerful to first-time viewers and serves the story of “Barbie” well.
I think it is one of those movie speeches that will stand the test of time and continue to be quoted 50 years from now, as much as we all would hope for society to change by then. The power of the speech is a testament to Ferrera as a performer and also Gerwig and Noah Baumbach as screenwriters.
On top of memorable performances from Ferrera, Gosling and Robbie, there is a whole army of Barbies, Kens and others in this ensemble that make the most of their supporting work. On the Ken side, there’s Simu Liu, Ncuti Gatwa, Kingsley Ben-Adir and Scott Evans, for starters.
On the Barbie side, you have Kate McKinnon at her best as “weird” Barbie, alongside Issa Rae, Emma Mackey, Hari Nef and others.
Michael Cera is perfect as Alan, and Rhea Perlman, Ariana Greenblatt and Will Ferrell give solid supporting performances as some real-world characters.
All of the visuals, storytelling and performances come together to make one of the most memorable movies I’ve seen this decade. After “Lady Bird,” “Little Women” and “Barbie,” I can’t wait to see what Gerwig does next.
