Biscuits with the Boss

If you watch “Ted Lasso,” you know that the titular character brings in biscuits for his boss every day.

If you’re in the U.S. and haven’t seen the show, you’re probably thinking of the ones generally associated with Southern cuisine of the buttermilk variety.

“Ted Lasso” takes place in England, so these biscuits are more similar to shortbread cookies. This gluten-free, vegan and low FODMAP recipe makes 9 “servings” or 18 biscuits.

Ingredients
2 sticks/8 ounces vegan butter, softened
0.75 cups powdered sugar
2 cups 1-to-1 gluten-free flour
0.25 teaspoons salt

Instructions
Make sure you put your butter out at room temperature well before you start baking so it is nice and soft.

Grease a 9×9″ or 8×8″ baking pan.

Once your butter has reached that super soft consistency, put it in a bowl or stand mixer and beat it so it’s nice and fluffy. Then add the powdered sugar and cream them together.

Mix in the flour and salt. When your batter is evenly mixed, pour it into your greased baking pan. Chill the filled pan for 30 minutes.

Meanwhile, preheat your oven to 300°F.

After chilling the dough, slice it into 9 pieces (3×3) and then slice each square into two rectangles (18 pieces total).

Then bake the pan of biscuits at 300°F for 50-60 minutes.

Let the pan cool. You may need to re-slice the biscuits after they bake.

Serve and eat. They are good on their own or with a nice glass of almond milk.

You can also go a little more indulgent and spread your favorite nut, seed or granola butter on the top. I tried a couple with chocolate sunflower butter and it was very yummy!

The Easy Route
A local vegan and/or gluten-free bakery might have some comparable biscuits ready for you to binge watch “Ted Lasso.”

The Pairing
When we got Apple TV+ for a month this summer, I knew we had to try out “Ted Lasso.”

Honestly, I was afraid that the show wouldn’t live up to the hype and buzz that has surrounded it for the last couple years.

But it was worth the hype! Honestly, one of the details that really hooked me in was Ted (Jason Sudeikis) bringing his boss, Rebecca Welton (Hannah Waddingham), a small pink box filled with biscuits every day.

The show is all about an English football team (or soccer for us Americans) that is under new leadership. Rebecca took over as owner of the team in her recent painful divorce, and she purposely hired Ted, an American football coach who knows nothing about soccer, to lead her team on the field.

There is a good balance of on-the-field storytelling with delving into the lives of the players and the team’s administrative employees.

In addition to Ted and Rebecca on the administrative side, there’s also the stoic Coach Beard (Brendan Hunt), Ted’s assistant coach; Nathan “Nate” Shelley (Nick Mohammed), the kit manager who Ted takes under his wing; and Leslie Higgins (Jeremy Swift), Rebecca’s right-hand man.

The players are led by the team’s superstar players, Jamie Tartt (Phil Dunster) and Roy Kent (Brett Goldstein), who is also the team’s captain. Toheeb Jimoh is also amazing as Sam Obisanya, and he really is given room to shine in the second season.

Juno Temple rounds out the cast as Jamie’s girlfriend, Keeley Jones, and she truly lights up every scene in which she appears.

Everyone in this ensemble gives dynamic performances, from the six or seven main characters to the folks who get one or two memorable lines per season. So much so that I often find myself wanting the show to linger on side plots just a little bit longer.

One of my favorite episodes centers on a Christmas party where almost all of the players celebrate together since many of them aren’t from England and are away from their loved ones. It really shows how good a show can be when the casting, writing and acting are all done to perfection.

I cannot wait for season three. Now that I know just how good “Ted Lasso” really is, I’m going to have to time our next month with an Apple TV+ subscription to when the new season premieres.
