Cacio e Party
We are planning our honeymoon in Italy and are exploring various Italian food, recipes and cocktails as “research.”
So when I saw Alia Shawkat’s character eating a bowl of pasta resembling cacio e pepe during my binge watch of “Search Party” earlier this year, I knew what my pairing would be.
This recipe is vegetarian, gluten-free and low FODMAP, making 4 “servings.”
Ingredients
8 ounces gluten-free spaghetti
4 ounces pecorino romano cheese, grated (plus more for serving)
8 tablespoons olive oil
4 teaspoons freshly ground black pepper (plus more for serving)
Instructions
Heat 6 tablespoons of the oil and the pepper over medium low heat in a skillet or frying pan for 1 minute. Set aside.
Place the uncooked spaghetti in a large skillet or wok and cover with water. Prepare your pasta al dente (typically 1 minute less than the package directs).
When the pasta is ready, place 2 tablespoons of the pasta water in with the oil and pepper mixture. After the water and oil mix, use tongs to transfer the pasta to the skillet.
Add the cheese and the remaining 2 tablespoons of oil to the skillet, then use the tongs to mix everything up and ensure every strand of spaghetti is coated with a mix of oil, pepper and cheese.
You can also add 4-6 more tablespoons of the pasta water to make it creamier.
Serve and enjoy with an episode or two of “Search Party!” As I stated in the ingredients, you may want to top your bowl with an additional sprinkle of grated pecorino romano and/or a couple cracks of black pepper.
The Easy Route
Find a restaurant that makes gluten-free cacio e pepe then order some for takeout or delivery.
The Pairing
“What did we do to deserve pasta?!” is something Shawkat’s character, Dory, exclaims during the scene I described above.
It’s one of my favorite scenes on “Search Party,” which follows Dory as she goes from a bored millennial who becomes obsessed with a missing acquaintance to an unlikely cult leader in the show’s five seasons.
She is joined on her misadventures by her boyfriend, Drew (John Paul Reynolds), along with her friends Portia (Meredith Hagner) and Elliott (John Early).
These four actors have fabulous chemistry, and you really believe that they are each other’s ride-or-die, chosen family as they go through one wild scenario after another on “Search Party.”
The show has a bit of a slow burn, especially in the first season, but it really escalates from there. If you stick with it until the end, there are plenty of twists that keep you curious about what exactly will happen next.
