D’ohnuts

We love donuts! I celebrate National Donut Day, which falls on the first Friday in June, pretty much every year.

“The Simpsons” is an obvious pairing due to Homer Simpson’s love of these yummy breakfast pastries.

This recipe is gluten-free, vegan and low FODMAP. I also chose to use beet juice as a natural dye for my frosting and the sprinkles I used are also naturally dyed.

Donut Ingredients
2 cups 1-to-1 gluten-free flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon salt
1 cup almond milk
0.75 cups maple syrup
0.25 cups avocado oil
1 teaspoon vanilla

Frosting Ingredients
0.5 cups margarine, softened
3 cups powdered sugar
2 tablespoons almond milk
1.5 teaspoons vanilla
1 tablespoon beet juice
sprinkles to top

Instructions
Preheat the oven to 350°F and grease your donut pan.

Whisk the flour, baking soda, baking powder, nutmeg and salt together in a bowl or stand mixer.
Add the milk, syrup, oil and vanilla. Mix until a batter is formed.

Carefully put the batter into the pan. If you’re fancy, you can use a piping bag.

Bake for 12 minutes or until a toothpick comes out clean when you poke a donut with it.
Let the donuts cool on a rack before decorating.

This recipe makes 12 donuts and most donut pans only hold 6 donuts, so repeat the last three instructions for round two. Make sure you re-grease your pan so the second half-dozen doesn’t stick.

After all the donuts have baked and started to cool, make the frosting.

In a stand mixer or using a hand mixer, start by combining the margarine and 1 cup of powdered sugar. Add the almond milk and vanilla.

Gradually add the 2 additional cups of powdered sugar then add the beet juice to dye the frosting.

If your frosting is too runny, add more powdered sugar. If it’s too dry, add more milk or beet juice – only add more beet juice if you want it to be a darker shade.

Put your sprinkles in a bowl next to the frosting bowl so you can dip your donuts in the frosting and then dip them in the sprinkles. Make sure both bowls are wide enough to dip your doughnuts into.

Once the donuts have completely cooled, dip them in the frosting then dip them in the sprinkles, one at a time.

I should preface this by saying I like a lot of sprinkles. If you want to be more delicate with them, go for a sprinkle technique instead of dunking the frosted donuts in a pool of sprinkles.

Place them back on the cooling rack for the frosting to solidify and to prevent too much mess on the cake plate or in the storage container you use.

Once the frosting has set, enjoy one of these Simpsons-inspired d’ohnuts with your favorite morning beverage. We recommend a glass of almond milk or a hot cup of coffee.

The Pairing
There’s a lot to love about “The Simpsons,” starting with Lisa’s vegetarianism and Homer’s appreciation for donuts.

I saw “The Simpsons Movie” when it came out (I was in college and loved it), but I didn’t start watching the show until I was in my 30s. In fact, I am currently in the middle of this great “Simpsons” viewing in season 13.

I especially love the “Treehouse of Horror” episodes for their takes on classic horror movies and stories.

As I continue watching, I feel like I’m slowly catching up on references I missed out on growing up as a result of being “Simpsons”-deprived. And my fiancé is enjoying rewatching episodes with me, pointing out which ones he and others regard as classics.
