Feta Night Live
In recent years, “Saturday Night Live” has jumped on social media trends, so I thought I’d pick a TikTok food trend for my pairing.
Instead of the feta tomato pasta that took the platform by storm, I’m doing a simple feta tomato dip. This vegan recipe makes 4-6 “servings.” It is gluten-free and soy-free so long as the vegan feta cheese you find and the items you dip in it are in those categories.
Ingredients
1 8-ounce block vegan feta cheese
1 10-ounce container cherry or grape tomatoes
0.25 cups tomato basil-infused olive oil
1 teaspoon black pepper
1 teaspoon dried parsley
bread, chips or crackers for dipping
Instructions
Preheat your oven to 350°F and coat a square baking dish with cooking spray.
Carefully place your block of vegan feta in the center.
Arrange your tomatoes in the dish on all four sides of the feta.
Drizzle the olive oil over the top of the tomatoes and feta. If you don’t have tomato basil-infused olive oil, you can use any savory flavor of infused olive oil you have or plain olive oil.
Sprinkle the pepper and parsley over the top. If you don’t have basil-infused olive oil, you can also sprinkle on a teaspoon of dried basil.
Bake for 20 minutes or until the feta is melted.
Serve with your favorite bread, crackers or chips. I found some rosemary thyme tortas that were perfect for this.
Enjoy as you watch an episode of “Saturday Night Live!”
The Easy Route
You might be able to find a jar of marinated tomatoes or a tub of premade vegan feta tomato dip to make this super simple.
The Pairing
At this point, “Saturday Night Live” is an institution, having been on the air for 49 seasons.
There are rumors the show might end after 50 seasons, and I will admit that wouldn’t surprise me as I know viewership is down and sometimes the skits in the latest seasons just don’t land well.
No matter what is in store for the show’s future, we will always be able to find some comfort in the show’s iconic moments, from the wild and crazy guys to Schweddy Balls to more cowbell and beyond.
I am a big fan of the recurring Weekend Update segments, which have allowed the cast to regularly bring some topical levity to the news of the week.
“Saturday Night Live” also allows the guest hosts to flex performing skills they might not be known as well for. I’m still waiting for Joseph Gordon-Levitt to do a big song and dance musical after seeing his acrobatic performance of “Make ‘Em Laugh” from “Singin’ in the Rain” during his SNL monologue.
