Friendly Flapjacks
The 1995 “Casper” movie is a classic from my childhood, and I love when Casper makes pancakes for his household.
This vegan, gluten-free pancake recipe makes about 6-8 medium pancakes, or 2-4 “servings” (depending on how hungry you are).
Ingredients
3 tablespoons oil (I recommend a neutral one like canola or vegetable)
2 tablespoons ground flax seeds
1.75 cups vegan milk
2 tablespoons maple syrup
2 cups 1-to-1 gluten-free flour
1 tablespoon baking powder
0.5 teaspoons baking soda
0.5 teaspoons cinnamon
0.25 teaspoons salt
Toppings
vegan butter or margarine
maple syrup
Instructions
Make flax eggs by combining flax meal with oil in a large bowl or stand mixer.
Add the milk and syrup to the “eggs” and whisk together.
In another bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
Slowly pour the dry ingredients into the wet while the mixer is running, until everything is incorporated.
Ladle the batter into (roughly) circular shapes on a griddle or oiled frying pan.
Once the bottom side has solidified, flip the pancake and cook until it is done. Most folks want a golden brown color, and I don’t mind if they get a little darker.
Repeat until you use up all the batter.
Serve with butter, maple syrup and/or the toppings of your choice, then enjoy with “Casper!”
The Easy Route
You can make this easier on yourself by finding a vegan, gluten-free pancake mix. Of course, the easiest route would be to have premade vegan, gluten-free pancakes delivered or ready for takeout.

The Pairing
I have adored “Casper” since it came out when I was 9. Christina Ricci’s character, Kat, is the reason why I go by the name Cat.
Kat finds herself befriending Casper after her father, Dr. James Harvey (Bill Pullman), an afterlife therapist, is hired to rid a house of all of its ghosts, namely Casper’s awful uncles.
I have probably seen this movie at least 30 times at this point, and I still know it backwards and forwards even though the bulk of those viewings were more than 20 years ago.
I love the bond between Kat and Casper, culminating in the classic “Can I keep you?” scene that will forever be burned into my brain.
On top of all this, Cathy Moriarty is absolutely at her deranged best as Carrigan Crittenden, the real estate developer who hired Dr. Harvey to rid the house of ghosts.
All of the performances elevate the story into one that provides an excellent blend of comedy, heart and a touch of horror.
In my opinion, “Casper” is the perfect family-friendly film to check out for Halloween.
