Marvelous Bagels
I have attempted vegan lox on bagels a few times now, so I figured it was time to share my recipe as I also say farewell to my beloved “The Marvelous Mrs. Maisel.”
This vegan, gluten-free recipe makes 2-4 “servings.”
Ingredients
2 vegan, gluten-free bagels
4 tablespoons vegan cream cheese (slightly softened)
12 pieces vegan, gluten-free lox
2 tablespoons capers
2 green onion or chive stalks, chopped
Instructions
Spread your slightly softened cream cheese on each bagel half.
Lay the slices of lox on top of the cream cheese. For this iteration in the photos, I was able to find premade vegan lox that is carrot-based.
Pour about half a tablespoon of capers on each bagel half.
Sprinkle the chopped onions or chives over the top.
If you’re saying this recipe makes 2 servings, you can put the 2 bagel halves together to make a sandwich or eat them as open-faced sandwiches.
Serve and enjoy with an episode (or season) of “The Marvelous Mrs. Maisel!”
The Easy Route
You can absolutely use dried chives in place of the fresh ones. Each half bagel would need about half a tablespoon.
If you have a local establishment that makes a vegan, gluten-free lox bagel sandwich, please share those details in the comments.
The Pairing
The final episodes of “The Marvelous Mrs. Maisel” premiered earlier this year, and I sat down and watched them a couple months ago.
The show was consistently great throughout its five-season run. I can’t recommend it enough, especially if you enjoy shows and movies about the entertainment industry like I do.
The series follows the titular Midge Maisel (Rachel Brosnahan) in the 1950s as she goes through a rocky divorce and starts a career as a stand-up comedian, a rarity for a woman in that era. Not only is she a comedian, she has pretty blue material, especially for the 1950s. The material is so raunchy that it winds up getting her in jail more than once and becoming friends with the one and only Lenny Bruce (played brilliantly by Luke Kirby).
“The Marvelous Mrs. Maisel” expertly weaves fact and fiction by including several real icons of the time like Bruce with the show’s fictional ensemble, which has been said to be very loosely based on iconic comedian and TV host Joan Rivers.
The ensemble they put around Brosnahan’s Midge is absolutely incredible. First and foremost, there is Alex Borstein’s award-winning turn as her manager, Susie. You can’t take your eyes off the screen when Susie is there, especially in the scenes she shares with Midge.
Then you have Midge’s family: comedic icon Tony Shaloub as her father, along with standout performances from Marin Hinkle as her mother and Michael Zegen as her ex-husband, Joel. He continues to be part of her life throughout the five seasons because they have two kids together and a shared love of stand-up comedy.
Brosnahan carries the show well in this star-making role, too, bringing an expert-level blend of comedy and drama to Midge, and her castmates match her in every scene.
The icing on the cake — or the cream cheese on the bagel — of “The Marvelous Mrs. Maisel” is the stunning attention to detail in the show’s costume design, set design and all other visuals. I would absolutely love to have some of the pieces in Midge’s wardrobe and I am particularly fond of the kitchen in her apartment as well.
Every aspect of the show combines to make it an excellent binge watch if you’re looking for a show to check out this holiday season.
