Perfectly Pleasant Grilled Cheese

“Pleasantville” is firmly in the comfort movies category, and grilled cheese is definitely one of the ultimate comfort foods.

Plus, one of the main locations of the film is a diner.

This recipe is gluten-free, low FODMAP and vegetarian, making one sandwich. You could easily adapt it to be vegan.

Ingredients
2 slices gluten-free sandwich bread, toasted
2 ounces soft goat cheese
2 slices cheese of your choice
1-2 tablespoons olive oil

Instructions
Toast the two pieces of bread at your toaster’s lowest setting. We jokingly refer to this as the “Cat” setting in my home.

Lightly pre-toasting the bread helps firm it up for spreading the goat cheese without getting it too crispy before you fry it.

Spread 1 ounce of goat cheese on each piece of bread. We used a dill-flavored one for this sandwich. You could also use another soft cheese like mascarpone or cream cheese in place of the goat cheese.

Assemble your sandwich with the two slices of cheese. I used one slice of gouda and one slice of pepper jack for a little heat.

Coat the inside of a small frying pan in the vegetable oil of your choice (I used olive). Heat on medium high for a minute. Then reduce to medium.

Place your sandwich in the pan and use a spatula to smush it down until the bread in the pan is getting crispy and the cheese is getting melty.

Carefully flip your sandwich and brown the other piece of bread.

When it’s done, slice it in half diagonally to give it the classic diner look. Eat and enjoy with “Pleasantville!”

The Easy Route

For my homemade version, I took a shortcut and used pre-sliced cheese instead of slicing my own.

The Pairing
“Pleasantville” is a movie that is very enigmatic to me, from my repeated viewings as a teenager to the appearance of two of my idols of the day, Tobey Maguire and Reese Witherspoon.

This movie is also what I like to refer to as a gateway movie, leading me to discover classics like “All That Heaven Allows” and indie films like “Far from Heaven.” What are some of your gateway films? Let me know in the comments.

But back to “Pleasantville.” Maguire and Witherspoon play teenage siblings, David and Jennifer, respectively, in the late 1990s who get magically sucked into the world of his favorite TV show. It’s a 1950s-60s family show reminiscent of “The Donna Reed Show” or “The Andy Griffith Show.”

Their parents are wonderfully portrayed by William H. Macy and Joan Allen, and Jeff Daniels gives a memorable dramatic turn as the owner of the local diner, where David works after school.

The plot of the film centers on the havoc and cause when they enter this black and white world, as they both figuratively and literally introduce color to it.

It might come off a little cheesy these days, but my 13-year-old self thought it was absolutely profound.
