Scooby Snacks

When I decided to do a Halloween pairing with “Scooby-Doo Where Are You,” I knew I had to pick a snack that Scooby and Shaggy would love.

Peanut butter is a canine favorite, so I decided to go with my signature chocolate-covered peanut butter corn flake bars.

This vegan, gluten-free and soy-free recipe makes about 16-20 “servings.”

Ingredients
1 26.4-ounce bag vegan corn flakes
32 ounces creamy peanut butter
20 ounces vegan, gluten-free dark chocolate chips
2 teaspoons plant cream

Instructions
In a microwave-safe bowl, melt your peanut butter in 30-second intervals until it’s nice and smooth. It took my peanut butter a couple rounds to reach the right consistency.

Pour about a third of the corn flakes into a large bowl, followed by half of the melted peanut butter. Continue with the alternating layers until all of the cereal and peanut butter is in the bowl.

Stir until all of the corn flakes are coated in a layer of melted peanut butter and start to stick together.

In a 9×13 baking pan, pour the peanut butter-covered cereal in and press it out so it’s in an even layer.

Put a tight cover on the pan and freeze it for a couple hours.

After that time has passed, melt your chocolate chips in a microwave-safe bowl at 30-second intervals, stirring between each heat up. It took my chocolate chips about 2 minutes total to get nice and melty. (Note: Any plain chocolate works here, it doesn’t have to be chocolate chips. So if you have some chocolate bars or baking chocolate to use up from Halloween, they would also work well.)

Stir the cream into the melted chocolate.

Spread the chocolate over the top of the chilled peanut butter-covered cereal.

Freeze the bars for at least another hour, covered.

Once they’re solid, slice the bars and serve! They’re great with ice cream or a nice glass of almond milk.

Enjoy them with your “Scooby-Doo” marathon!

The Easy Route
The only step I can think of to make this one easier at home is to find a chocolate sauce you can use over the top instead of making your own.

The Pairing
I grew up watching reruns of “Scooby-Doo, Where Are You!” and we recently concluded a binge watch of the three-season series as adults.

The show is still a lot of fun, following Scooby, Shaggy, Velma, Fred and Daphne as they solve seemingly paranormal crimes. They are truly the original fab 5!

The gang goes on all sorts of ghoulish, mostly lighthearted, adventures that make the show a fun family watch for the Halloween season.

“Scooby-Doo, Where Are You!” was an obvious choice for this year’s Halloween post, and I’m sure it won’t be the last appearance from the “Scooby-Doo” universe on Veg Out.

I am eager to rise to the challenge of making more munchies that Scooby and Shaggy would love to snack on while they are embroiled in a crime caper.
