Showstopper Sandwiches

Because “Insecure” creator and star Issa Rae is an executive producer and guest star on “A Black Lady Sketch Show,” I knew I wanted to take the unique cookie recipe I made to pair with “Insecure” and push it to the next level for my “Black Lady Sketch Show” pairing during the Summer of Scoops.

This vegan, gluten-free cookie butter ice cream sandwich recipe makes approximately 8-12 sandwiches, and you may have some extra ice cream as well.

Cookie Butter Ice Cream Ingredients
2 cups extra creamy oat milk (or another vegan milk)
2 11.2-ounce cartons vegan cookie butter creamer (22.4 ounces total)
1 teaspoon cookie butter extract
2 tablespoons vegan sugar
1 teaspoon xanthan gum

Ice Cream Sandwich Ingredients
24 chocolate chip cookies (preferably this recipe)
2-3 pints of cookie butter ice cream

Instructions
Pour the milk, creamer, cookie butter extract, sugar and xanthan gum into a blender. If you don’t have cookie butter extract, you can use vanilla or almond extract. The xanthan gum is optional but helps keep the ice cream soft. (Read more of my ice cream 101 tips here.)

Pulse until all of the ingredients are evenly mixed.

What happens next depends on your ice cream maker. If you have a more standard one, you’ll pull your chilled (for 24 hours) bowl out and pour in the mixture to make the ice cream.

If you have one like mine, you pour the mixture into two or three pints then freeze them for 24 hours.

After that time, you put the pint into your ice cream maker and let it do its magic on the ice cream setting.

Whether you’re making cookies from scratch, using a premade dough or using store bought cookies, make sure they are completely cooled before making your sandwiches.

While making the ice cream, put a parchment-lined baking sheet in your freezer so you are ready to store the sandwiches.

Have additional sheets of parchment ready to wrap each cookie.

Place a cookie flat side up on one of the pieces of parchment. Put a circle-shaped cookie or dough cutter on top and fill it with ice cream.

Carefully remove the cutter and place another cookie on top of the ice cream, flat side down.

Wrap the sandwich in parchment and place it in the freezer on the parchment-lined baking sheet.

Repeat the sandwich assembly steps until you run out of cookies or ice cream.

Serve and enjoy with a skit, episode or season of “Black Lady Sketch Show!”

For the leftovers, you might want to allow them to thaw on the counter for 10 minutes before taking a bite. I recommend eating these within a few days to prevent freezer burn.

The Easy Route
You can use premade chocolate chip cookies or premade vegan cookie butter ice cream (if you can find it). Just note any premade cookies won’t have my secret ingredient: nacho chips.

It will be pretty impossible to find this exact recipe as a store-bought food or a dish on the menu at a restaurant or ice cream parlor. The Pairing
As I indicated up top, I was drawn to “Black Lady Sketch Show” as a way to fill the void left by “Insecure.”

I quickly got into all of the recurring skits, binge watching the first three seasons rather quickly.

Robin Thede and her crew of cackle-inducing comedians, including Ashley Nicole Black, Skye Townsend and Gabrielle Dennis (among others), keep you wanting more.

My favorite recurring sketch is “Black Lady Courtroom,” which features guest star Yvette Nicole Brown (best known for “Community“) as a judge and other members of the cast and guest stars as attorneys, jurors, alleged criminals and other courtroom staff.

I wrapped up the fourth and final season earlier this year, and I’m excited to see what’s next for these ladies, whether it’s comedy or not.
