Super Nachos
I am not a sports ball person, so I’m advocating for some alternative programming ahead of the big game.
I recently binge-watched the whole season of “Colin in Black and White,” Ava DuVernay’s show about football star Colin Kaepernick’s childhood.
This recipe for super nachos is vegetarian, gluten-free and makes 1 “serving.”
Ingredients
1 serving plantain chips or tortilla chips
1 serving vegetarian crumbles
0.5 cups black beans
0.25 cups shredded cheese
2 tablespoons queso
2 tablespoons salsa
2 tablespoons sour cream
2 tablespoons guacamole
1 teaspoon cilantro, chopped or dried
Instructions
Prepare your crumbles per your package’s instructions. We used a package of dried crumbles, so we had to soak them in water then fry them up with a little oil.
Lay out the chips in your bowl or on your plate. We used chili lime plantain chips, but you can use the standard tortilla chips if you like.
Top the chips with the crumbles, black beans, shredded cheese, queso and salsa.
Microwave your nachos for 1 minute or until they’ve reached your desired heat.
Add the sour cream, guacamole and cilantro to the top of your nachos.
Enjoy with an episode or two (or six) of “Colin in Black and White.”
The Easy Route
We made this one very easy, but nothing’s easier than picking up some amazing loaded vegetarian nachos from your favorite restaurant that makes them.
The Pairing
I very quickly made my way through all six episodes of “Colin in Black and White.”
The way DuVernay and Kaepernick framed the show is outstanding, guiding you into his story with narration and storytelling from the man himself.
I love that Kaepernick’s narration gives larger context to the worlds he found himself in, both on a small scale with the ins and outs of football and on a bigger scale with a deep dive into microaggressions through one of the series’ most compelling episodes.
In telling Kapernick’s story, Jaden Michael is absolutely perfect as the young Colin. Nick Offerman and Mary Louise Parker give solid performances as his parents, who are at best clueless and tone-deaf, and at worst doing a few flat-out racist things.
I am a big fan of Ava DuVernay’s work in film and television. If you only know her from this or “Selma,” I highly recommend checking out “Middle of Nowhere,” “Queen Sugar,” “I Will Follow” and “One Perfect Shot.”
