Super Salad

When I decided to feature “She-Hulk: Attorney at Law” on the blog, I knew I had to go green in a big way.

My take on the green goddess salad features only green ingredients, and it’s vegan and gluten-free, making 2 “servings.”

Grr-een Goddess Dressing Ingredients
0.25 cups vegan, gluten-free goddess dressing
0.5 nori sheets, crumbled into flakes
0.5 teaspoons dried parsley
0.5 teaspoons dried cilantro

Salad Ingredients
2 cups spinach (or another leafy green or lettuce)
1 cup edamame, shelled
0.5 cups pumpkin seeds
1 avocado, sliced
0.5 nori sheets, crumbled into flakes
1 small green starfruit, sliced (optional)
Grr-een Goddess Dressing
1 lime, sliced into wedges

Instructions
I want to start by saying the only requirement for this salad is that all ingredients are green. If you don’t like edamame or don’t have any limes or lime juice at your disposal (as examples), feel free to skip or replace.

Start by mixing your dressing ingredients together in a small bowl. Fold the nori flakes, parsley and cilantro into the dressing until they’re thoroughly combined. Set aside.

Put a cup of spinach in each salad bowl.

Add half a cup of shelled edamame to each bowl.

Pour a quarter cup of pumpkin seeds on each salad.

Split the avocado slices between the two bowls.

Take the half sheet of remaining nori and crumble it on top of the two salads.

I am not a fan of starfruit, but my husband is, so I sliced one up and put it on his salad.

Place half of your lime wedges on the side of each bowl.

Top your salads with your homemade dressing. You should use half of it on each salad.

Just before you take a bite, squeeze those lime wedges into the salad for some fresh tang.

Eat and enjoy with an episode of “She-Hulk!”

The Easy Route
Instead of a fresh lime, you could sprinkle a teaspoon of bottled lime juice on each salad.

Furikake seasoning is also a great replacement for the crumbled nori if you have it.

The Pairing
I absolutely loved the first season of “She-Hulk: Attorney at Law,” and I’m holding out hope that there will be more episodes, however unlikely that may be.

Tatiana Maslany is magnificent as Jennifer Walters, Bruce Banner/The Hulk’s attorney cousin who gets some of his powers when they’re in a car accident together. It was nice to have a familiar Avengers face in the form of Mark Ruffalo to kick off the series, but Maslany proves her staying power post-“Orphan Black” as the star of this show.

Jennifer is convinced she can go about her normal life as an attorney, and much of the show’s plot focuses on her figuring out how to make that happen.

I like how this show focused on some of the little details of having hulk powers, such as finding clothes that adapt as you grow or shrink instead of ripping your favorite pants or winding up scantily clad in a busy neighborhood.

“She-Hulk” definitely brings the drama and action sequences associated with superhero shows and the Marvel Cinematic Universe, but I think the humor and levity the show had made me love it. Ginger Gonzaga has some fantastic one-liners as Nikki, Jennifer’s friend and colleague.

Charlie Cox’s Matt Murdock/Daredevil makes an appearance in this show, and I hollered when I saw him, as I loved his Netflix show and was very sad when it went away.

The rumor of him appearing drew me in, but the capable cast and crew kept me watching week after week, which is a feat in this age of endless streaming options and distractions.
