Taquitos & Tissues

I love watching “Queer Eye,” and I love seeing Antoni, one of the Fab Five, come in with some quick and easy food ideas for each person featured on the show.

We have our own easy recipe for vegan and gluten-free taquitos, which makes 4 “servings.”

Ingredients
2 cups refried beans
0.5 cups salsa
12 thin corn tortillas
dipping sauces of your choice: vegan queso, guacamole, vegan sour cream, more salsa, etc.

Instructions
Preheat your oven to 425°F and line a baking pan or dish with parchment paper.

Use a blender or food processor to mix the refried beans and salsa together. For our pictured recipe test, we used half refried pinto beans and half refried black beans.

Heat each of the 12 tortillas individually in a warm skillet for about 30 seconds each to prevent them from breaking.

As you pull a tortilla out of the pan, fill it with 1/12th of the filling, roll it up tightly and place it on the parchment-lined pan. Repeat for the remaining 11 tortillas.

Bake the taquitos in the oven for about 10 minutes.

Serve and enjoy with your favorite dipping sauces! I like a quick mix of salsa and sour cream at a 1:1 ratio.

The Easy Route
Frozen taquitos or fresh taquitos from a local restaurant or grocery store are the easiest options.

You could also find a can of spicy refried beans to eliminate the step of needing to mix plain refried beans with salsa.

The Pairing
I watched and adored the original “Queer Eye for the Straight Guy” as a teenager, and Netflix’s “Queer Eye” reboot is even more amazing 20 years later.

If you need a satisfying emotional rollercoaster in your TV lineup, look no further. In each episode of the show, the Fab Five enter into someone’s life to uplift them.

The Fab Five are Karamo Brown, the life coach; Bobby Berk, the interior designer; Jonathan Van Ness, the grooming specialist; Tan France, the fashion expert; and Antoni Porowski, the resident foodie.

One of my favorite parts about the reboot is that it is more inclusive with the participants, going beyond straight men to reflect the world in which we live.

I particularly love the episodes where they work with other queer folks, especially one episode in season six where they work with a young trans woman.

When you sit down to eat your taquitos and watch “Queer Eye,” make sure you have a box of tissues nearby. I have teared up during almost every episode of the show.
