The Last Pizza on Earth

Any time I make a frozen pizza, the frozen pizza song from “The Last Man on Earth” immediately pops into my head. This pairing came very organically.

The only food trick my dad ever taught me: Buy a frozen cheese pizza and add the toppings you want. Between being a college student on a budget and my fluctuating dietary restrictions, this trick has stayed with me into my thirties.

Depending on the pizza and toppings you choose, this recipe can meet the following dietary restrictions, either individually or in some combination: low FODMAP, vegetarian, vegan, gluten-free, dairy-free, lactose-free. The pizza pictured in these photos is vegetarian, low FODMAP and gluten-free.

My fiancé and I loved watching “Last Man on Earth” together when it aired, and we also love making pizza together. One fun thing to do if you’re preparing this frozen pizza for more than one person is making it personalized. Taking into account your appetites and how large the pizza is, you can divide it in halves, thirds or quarters and each section can be topped the way you want it to be.

Ingredients
1 frozen pizza (something basic like cheese or margherita)
Any toppings you want: veggies, vegan/vegetarian meat substitutes, legumes, extra cheese, oils, vinegars, herbs, spices.

Instructions
Preheat the oven according to the directions on the pizza packaging. Place the pizza on a pan and start adding your toppings.

For the pictured pizza, I used a low FODMAP and gluten-free cheese pizza as my base. I kept it simple and added about a quarter cup of kale-based spring mix and about a cup of meatless grounds.

When the oven is preheated, place the pizza in the oven and cook for the time indicated on the pizza packaging. Note that you will likely need the higher end of the baking time and possibly an extra minute or two, depending on how many toppings you added.

Slice and serve!

The Easy Route
A frozen pizza already makes things pretty easy, but you could either buy one that has the toppings you want or order a piping hot pizza for takeout or delivery.

The Pairing
“Last Man on Earth” is one of my favorite recent sitcoms.

The ensemble cast is hilarious, led by “Saturday Night Live” alum Will Forte and Kristen Schaal (who was previously best known to me as Mel on “Flight of the Conchords”).

Forte plays Phil, who, after an apocalyptic event, believes himself to be the last person on Earth. That is, until he runs into Schaal’s Carol.

They continue a short streak of adding folks to their crew, similar to how many apocalyptic dramas do it. Just like those dramas, people come and go as well. One of my favorite multi-episode guest stars is Jason Sudeikis as someone from Phil’s past.

As I mentioned above, there is a scene in the fifth episode of season three where the crew comes across a building that has power and some fun amenities, including frozen pizza and a way to bake it.

I dare you to watch that episode and not get the frozen pizza song stuck in your head.
