The Wedding Pizza

The actual pizza named “The Cat” at my wedding next month will likely vary from this recipe, but I wanted to pair one of my favorite pizza recipes with my favorite wedding movie, “The Wedding Singer.”

This vegan chicken bacon ranch pizza makes 4 “servings.” Our bacon pictured here has wheat as an ingredient, but vegan bacon that is also gluten-free does exist.

Ingredients
1 vegan, gluten-free pizza crust (recipe here if you want to make one from scratch)
0.5 cups vegan ranch dressing
5 ounces vegan, gluten-free chicken
2 slices vegan bacon, fried and crumbled
0.5 cups vegan, gluten-free mozzarella, shredded
2 teaspoons parsley

Instructions
If you’re making your pizza crust from scratch, follow the instructions to do that. This time around, we used a premade crust.

Preheat your oven to 400°F.

Crisp up your bacon in a frying pan. Break it up into crumbles and set aside.

Once your crust is ready (including any pre-baking the crust instructions list), spread the ranch on top of it.

Place the chicken on top of the ranch. If your chicken is frozen, I recommend thawing it first, as the pizza cooking time will not be enough time for it to heat properly.

Sprinkle the crumbled bacon, shredded mozzarella and parsley over the top.

Bake for 12 minutes, or until the cheese is melted.

The Easy Route
You can prep your bacon in a microwave or air fryer if that’s easier for you.

Of course, the easiest route is to find a pizzeria that will make you a vegan pie, but it might be hard to specifically find a vegan chicken bacon ranch pizza to buy.

The Pairing
“The Wedding Singer” truly is my favorite wedding movie, and it is one of my all-time favorite romantic comedies.

Adam Sandler stars as Robbie, the titular wedding singer. Drew Barrymore enters the scene as Julia, a new waitress at the banquet hall where he frequently performs.

Robbie gets left at the altar at the beginning of the movie, and Julia is engaged to a huge jerk, Glenn (Matthew Glave).

Julia and Robbie become friends when she is feeling overwhelmed by wedding planning and he offers his expertise.

Barrymore and Sandler have chemistry off the charts, and they both really turn on the charm in “The Wedding Singer.”

Rounding out the cast are some of Sandler’s frequent collaborators: Allen Covert as a limo driver, Ellen Albertini Dow as Robbie’s music student, Alexis Arquette as Robbie’s backup singer, Jon Lovitz as another wedding singer, Kevin Nealon as a banker and the one and only Steve Buscemi as a memorable best man. Christine Taylor also plays a larger supporting role as Holly, Julia’s cousin and another waitress.

One of the best things about the movie is the music. It’s set in the ’80s, so Robbie sings some bangers and there are also great songs in the soundtrack.

Sandler is an icon of my childhood and while he is best known for his over-the-top comedies like “Happy Gilmore” and “Big Daddy,” my favorite performances from him are the roles that showcase his softer side, like this and “Punch-Drunk Love” (sure to be the focus of a future pairing).

Speaking of future pairings, this is not the last time I will highlight a Barrymore-starring rom com on this blog. Everyone jumps to Julia Roberts, Meg Ryan, Reese Witherspoon and other leading ladies when they think of rom coms, but Barrymore is the queen of them in my book.

Knowing my deep appreciation for rom coms, Barrymore and Sandler, it should be no surprise how deeply I love “The Wedding Singer.”
