Villanueva Arepas
In “Jane the Virgin,” it is made very clear that Jane’s grandmother makes outstanding arepas.
I make no promises that these are as outstanding, but this gluten-free, vegan recipe makes about 8 yummy arepas or 4 “servings.”
Ingredients
2 cups corn flour
2 teaspoons salt
2 cups warm water
3-4 tablespoons oil
2 cups spinach
1 cup vegan cheese, shredded
0.25 cups green onions, diced
4 teaspoons lime juice (optional)
Instructions
Mix the corn flour and salt together, then form a well with it.
Pour the water into the well and push the edges of the well into the water to form a dough. I used a pastry cutter for this, but a fork would work just fine.
Let it rest for 5 minutes.
Put 1 tablespoon of oil in a large skillet and heat on medium high. To make ours a little spicier, we used chili-infused olive oil, but any vegetable oil will work.
When the oil is heated, carefully drop in 2-3 scoops of the dough and flatten them out.
Cover and cook until golden brown, approximately 6-8 minutes. Flip the arepas then cover and cook for another 6-8 minutes.
Repeat the oil and frying steps until you’re out of arepas.
Split the arepas in half then add spinach, cheese and green onions.
Squirt a little lime juice over your filling if you like.
Eat and enjoy with a binge watch of “Jane the Virgin!”
The Easy Route
You may be able to find premade arepas ready for your fillings at a local bodega or grocery store.
The easiest route, though, is to find a restaurant near you that makes them ready to eat for delivery or takeout.
The Pairing
I wasn’t sure what to expect when I started watching “Jane the Virgin,” but I got hooked on this take on the telenovela pretty quickly.
Gina Rodriguez is magnificent as the titular Jane Villanueva, who finds herself pregnant after a mishap at her gynecologist’s office.
The father turns out to be her boss, Rafael Solano (Justin Baldoni), who owns the hotel where she works as a maid.
Throw in Jane’s detective boyfriend (Brett Dier), Rafael’s villainous wife (Yael Grobglas), Jane’s protective mother (Andrea Navedo), Rafael’s gynecologist sister (Yara Martinez), Jane’s estranged actor father (Jamie Camil) and Jane’s very religious mother (Ivonne Coll), and you have intersecting storylines made to stir up a ton of drama for five seasons.
Jane is an aspiring romance novel author, and some of the best scenes in the series are the fantasies and storylines she plays out in her head.
Narration by Anthony Mendez also puts a perfect bow on the series to make it a fun and intriguing watch.
At 100 episodes (exactly), watching this show is an investment, but it’s definitely one that pays off season after season.
