Weedy Hash

“Weeds” seems like an incredibly appropriate show to write about for 420, and a breakfast hash seems like a perfect food choice.

This vegan hash makes 4 “servings.”

Ingredients
0.25 cups olive oil
1 12-ounce package shredded potatoes
1 6-ounce package vegan ham
1 tablespoon chives
1 tablespoon parsley

Instructions
Dice your ham so it’s in small pieces. You can use a whole vegan ham roast or vegan deli slices like we did.

Heat the olive oil in a frying pan over medium heat then add the potatoes, ham and herbs.

Mix everything together and cook until the potatoes and ham start to get to the crispy level you prefer.

Serve and enjoy with an episode or two of “Weeds!”

The Easy Route
You might be able to find a premade vegan meat and potato mix to heat up, or some folks might have a restaurant nearby that makes a mouthwatering vegan hash.

The Pairing
I watched “Weeds” right around the time it aired, usually one season at a time as the DVDs came out.

I cannot speak to how it’s aged in the last two decades because I didn’t have time for a rewatch due to wedding and honeymoon planning (they’re both happening this weekend!).

From what I remember, Mary-Louise Parker was absolutely captivating as Nancy, a widowed housewife turned drug dealer. However, Hunter Parrish and Alexander Gould absolutely stole the show as her sons, Silas and Shane.

Throw in some dynamite supporting work from Justin Kirk, Romany Malco, Kevin Nealon, Guillermo Díaz, Maulik Pancholy and Elizabeth Perkins, and you have a show that expertly toes the line between comedy and drama, deserving of all the accolades it received when it aired.
